Heather Tips were used in the days prior to hops to impart a pleasant aroma and smooth bitterness to the beer. Mostly associated with Scottish ales, but Heather Tips are making a comeback on the brewing scene. Add 2 ounces at the beginning of the boil. Heather Tips are complimented well with honey and sweet gale.
