Gypsum (also known as calcium sulfate) is used in brewing to add permanent hardness (in the form of calcium ions) to water. Many brewers use it to increase the hardness of their water if using RO, Distilled, or soft water. Harder water helps to accentuate hop character.
Directions:
Typical use: about 1 teaspoon per 5 gallons.
