Description
Uses: Bentonite (AKA Montmorillonite) is a naturally occuring hydrated aluminosilicate of sodium, calcium, magnesium, and iron. Used as a fining agent for wine. It is also useful when added to a clear juice must at the beginning of a fermentation to provide yeast nucleation sites and speed the onset of fermentation.
Directions: Use 1/2 g per L of wine. Dissolveby blending into hot water (for every gram of bentonite use about 25 mL of hot water: for a 23 L batch of wine that is 11.5 g bentonite in about 300 mL of hot water).
Hint: Using more than the recommended amount can strip melanoidens (colour and flavour compounds) from wine.
Storage: Cool, dry, and at room temperature.
