FINISHING PACKS

Finishing packs or F-Packs are additive packages added to the wine at stabilization when fermentation is complete. These unique packages bring a rounded sweetness, oaking or floral intensity to those styles which require it.

OAK

Winemakers can achieve an effect similar to that of aging the wine in oak barrels. The addition of oak imparts warm, toasty, vanilla flavors and fragrances which can contribute to the overall character of the wine. Oak can even the early drinkability of certain wines. Use oak powder, shavings or chips in the fermenter and oak cubes or an stick in the carboy. It is important not to over-oak a wine as it may overpower the wines natural varietal characteristics.

ELDERFLOWERS

Elderflowers are the flowering buds of the Sambucus Niger plant which is found in Europe. The addition of dried elderflowers adds a flowery aromatic quality to wine – which is desirable in some soft German-style whites. Again, it is important not to over-flower a wine.

RAISINS

Raisins are simply dried grapes. As such, they will make a wine almost as good or as bad as the original grapes from which the raisins were made. In the making of fruit wines, raisins are often used to add body and vinousness to the wine. Dark raisins will make a dark and somewhat brownish wine, while white or golden raisins will make a white or golden wine.

VARIETAL YEAST

Each yeast strain has been selected for its suitability to ferment a particular grape variety; each strain promotes body and complexity to give its own varietal wonderful depth of flavor and a characteristic aroma.

WINE SMOOTHER

Wine Smoother when added to a wine gives the wine “legs”, the viscous drips that run down the side of a glass in which wine is swirled.

BANANA FLAKES

Banana Flakes smooth the wine and enhance the body and texture – sixty grams (60 g) is sufficient for 23 Litres.
